Amish Baked Oatmeal
1 1/2 c.oatmeal ,1/2 c. sugar ,1/2 c.milk ,1/4 c. melted margarine ,1 egg ,1 t. baking powder ,3/4 t. salt ,1 t. vanilla-preheat oven to 350 degrees.Combine all ingredients and pour into well greased pan(i use 8"x8").Bake 25-30 min.or until edges turn golden.Spoon into bowl.Add milk,raisins,brown sugar,etc.This will look like soft granola. Today I stayed home nursing myself back to health and started the day with baked oatmeal.It's definitely comfort food and takes oatmeal to a whole new level.The possibilities are endless as to what you can add to it.I like to add a dash of butter flavored pancake syrup on top also.Yum......
